Soy Product - Soy Is The Miracle Food

Like many other grains, there are many culinary uses for soy.  The main benefit of cooking with soy is that not only do you get a good source of protein, but soy is also rich in fiber.  Soy can be used in making everything from appetizers, to desserts, even drinks, so get ready for a feast!  There are hundreds of recipes that use soy to varying degrees, but we thought we'd use one of our own personal favorites to get you started.

Flax and Soy Bars (Apple)


Make your own tofu veggie burgers 
  • 300 g (10 oz) firm tofu, ground  
  • 175 mL (3/4 cup) quick rolled oats
  • 30 mL (2 tbsp) sunflower seeds, ground
  • 3 mL (1/2 tsp) onion powder  
  • 3 mL (1/2 tsp) basil
  • 3 mL ( 1/2 tsp) oregano
  • 30 mL (2 tbsp) tamarind, or regular soy sauce  
  • add a dash of powdered garlic, or very finely chopped garlic 
  • and a dash of sea salt, and fresh ground pepper
  • if you want to make them a bit spicier, you may add some crushed chili pepper

Mix and knead until the ingredients until everything has been thoroughly blended, shpe into patties and bake at 325°F for about 20 minutes on an oiled cookie sheet.

You may also fry them in a non-stick pan in some extra virgin olive oil.

Serve on a bun (onion rolls are quite good), and be creative with your condiments, we tend to favor honey-BBQ sauce, or Dijon mustard, but they taste great with regular mustard and ketchup too!

Make your own soy coffee cake

  • 200 mL (1 cup) corn/soy blend 
  • 200 mL (1 cup) wheat or whole-wheat flour 
  • 60 mL (4 tbsp) non-fat dry milk 
  • 12 mL (2 tsp) baking powder 
  • 200 mL (1 cup) brown sugar 
  • 3 mL ( 1/2 tsp) cinnamon 
  • 3 mL ( 1/2 tsp) nutmeg 
  • 200 mL (1 cup) raisins 
  • 75 mL (1/3 cup) soy oil 
  • 300 mL (11/4 cup) water or soy milk 
  • add a dash of salt

Pre-heat oven to 375°F. add mixture of corn and soy, flour, baking powder, non-fat dry milk and brown sugar.  Mix in raisins, spices, salt, soy oil, and water or soy milk in a saucepan, add the dry ingredients, mix well, and pour into a greased cake pan, or cake mold . Bake for about 40 minutes.
